Elizabeth Elliot was a famous missionary to Equador during the 1950’s. Her husband was brutally killed by a savage tribe which left her alone with their toddler daughter. Amazingly, Mrs. Elliot returned to the place of her husband’s death and lived there among the native people with her daughter, Val. Val had quite a unique childhood. Elizabeth recalls the details of her little girl’s life:
While I was writing a letter at my desk fifteen years ago my small daughter interrupted to say that she had dropped two sucres (Equadorian coins) into the rain barrel, and could she please put on her bathing suit and swim to the bottom to get them? I said she could.
Today she is twenty-one.

Cole Slaw Recipe

SASSY SLAW
Ingredients:
3 Tablespoon(s) Sour Cream, reduced fat
1 lb Cabbage, sliced thin
3 Tablespoon(s) Apple Cider Vinegar
1/4 sm Red Onion, chopped
2 Teaspoon(s) Sugar
1/4 Green Pepper, chopped
1 Teaspoon(s) Salt
1 Carrot, shredded
6 Drop(s) Tobasco Sauce, or Hot Sauce
Directions: Stir together sour cream, vinegar, sugar, salt and tobasco sauce in small bowl. Cover with plastic wrap and refrigerate 1 to 2 days. Place cabbage, onion, pepper and carrot in plastic storage bag. Seal. Refrigerate 1 to 2 days. Before serving, combine sour cream mixture and cabbage mixture in large bowl. This may be done up to 1 day before serving. Serve cold.

HOLIDAY CRUNCH SALAD
2 bunches fresh broccoli, broken in sm. pieces
1 head cauliflower, broken in sm. pieces
1 red onion, chopped
2 c. cherry tomatoes, cut in half
DRESSING
1 c. mayonnaise
1 tbsp. vinegar
Dash of salt & pepper
1/2 c. sour cream
2 tbsp. sugar
Combine dressing ingredients, mix well. Toss with vegetables. Serve well chilled. Can be done a day ahead and is particularly pretty if served in a clear glass bowl. Serves 6.

Learning From the Apostle Paul Repost

Here’s An Old Entry that I need to repost because it wasn’t written correctly!
Man was born for adversity.
So why do I whine so loud when it comes my way? Why do I not take on challenges with vigor and an adventurous attitude, knowing I will grow?
In the devotional Streams in the Desert, Mrs. Charles Cowan talks about the Apostle Paul’s struggles. It seems to me Paul was dedicated to God enough that he didn’t need to go through bunches of hardship. But of course, I’m not God and didn’t know what Paul needed to make him all he can be for Christ.
In 2 Corinthians Paul talked of his difficulties in 5 parts:
8 We are troubled on every side,
yet not distressed;
we are perplexed,
but not in despair;
9 Persecuted,
but not forsaken;
cast down,
but not destroyed;
10 Always bearing about in the body the dying of the Lord Jesus, that the life also of Jesus might be made manifest in our body.

Dr. Oz’s Green Drink

A famous and informative book that every person should read is called, You, The Owner’s Manual. It is written by a famous world renowned heart surgeon known as Dr. Oz. Here’s a healthy drink that he makes as a breakfast drink for himself many mornings.
What’s in Dr. Oz’s green drink?
2 cups spinach
2 cups cucumber
1 head of celery
1/2 inch or teaspoon ginger root
1 bunch parsley
2 apples
Juice of 1 lime
Juice of 1/2 lemon
After everything is combined in a blender, this recipe makes 28 to 30 ounces—about three to four servings.

Full Moon 5k

My family and I had fun last Saturday, May 10. We ran a 5k. My daughter ran in a 1 mile run. My niece and her family were there also. It was a big running event for Tulsa called the Full Moon Run.
It began in the evening. The fun run was at 7:30 and the 5k was at 8. The route was near 21st and Boulder and then ended up on Riverside. I ran together with my niece Crystal. The view was great on Riverside. We ran on the paved road along the Arkansas River as the sun was setting. The wind was gusty but not cold.
