Mulberry Recipes

I found some mulberry trees just recently and I’ve been researching the internet. Here’s a website that gave some good info about Oklahoma Mulberry trees. It is called Dave’s garden.
FRESH MULBERRY PIE
3-4 c. fresh mulberries
1 c. sugar
3 tbsp. tapioca
1 1/2 tbsp. real lemon juice
2 c. cherries (opt.)


Place in a mixing bowl with 1 cup sugar and stir occasionally to make a juice. After juice has formed, add 3 tablespoons tapioca and let stand 20 minutes. Then add 1 1/2 tablespoons real lemon juice. Place in a saucepan and bring to a boil. Cool 10 minutes, then pour in pie shell. Serve with whipped cream.

Mulberry Muffins
1 1/2 cups all-purpose flour
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1/2 cup fat free sour cream
1/4 cup skim milk
2 tablespoons applesauce
1 egg
1/2 teaspoon almond extract
1/2 cup mulberries
Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together sour cream, milk, applesauce, egg and almond extract. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.

Mulberry Jam
3 lbs mulberries, ripe
1/2 cup lemon juice
7 cups sugar
1 bottle liquid pectin
Directions
1Put berries in saucepan and crush.
2Heat gently until juice starts to flow.
3Then, simmer covered, for 15 min.
4Put into jelly cloth or bag and squeeze out the juice. Measure out 3 cups of juice into a very large saucepan.
5Add sugar and lemonjuice, mix well.
6Put over high heat and bring to a boil, stirring constantly.
7AT ONCE STIR IN THE PECTIN.
8Then, bring to a rolling boil and boil hard for 1 min., stirring constatly.
9Remove from heat skim off the foam, with a metal spoon.
10POUR QUICKLY INTO HOT STERILIZED JARS AND THEN SEAL.
11Then Enjoy.

(Another) Mulberry Jam
Mulberry Pancakes
1 cup whole wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
� cup Oklahoma yogurt
2 tablespoons olive oil
mulberries or home-made mulberry jam
1 Oklahoma egg
Mix the dry ingredients, add the oil and mix thoroughly. Beat the egg, add to the dry ingredients, add yogurt and mulberries or mulberry jam (maybe a half cup of fresh mulberries or a quarter cup of mulberry jam, add more if you like �em sweeter). Mix well, but not excessively, lumpy pancake batter makes a lighter pancake. Fry on a hot griddle until done on both sides. Serve with Oklahoma butter and more jam.
