Summer Menu

Jonathan and I made out a weekly menu for the summer for breakfast, lunch and dinner. I added more sandwich type foods with lettuce and tomatoes and more whole grains for breakfast. Since I’ve been home more I can feed my family healthier. Here’s our list.


Breakfast
Cold cereal Honey Bunches of Oats
Brown rice with brown sugar and butter
Oats with cinnamon, nutmeg and brown sugar
Brown rice
Scrambled egg and cheddar cheese burrito
Brown rice*
Sausage, egg and cheese sandwich
*I’m going to feed my family brown rice AMAP until they get tired of it because it is very healthy.
Lunch
Soft shell tacos
Breaded chicken patty sandwiches
Hot dogs and chilli
Tuna sandwiches
Ramen noodles or mac and cheese**
Chilli and crackers
Tuna sandwiches
**Ramen noodles are unhealthy but I have to balance cost with healthiness. And I’m encouraging Jonathan to learn how to make homemade chilli rather than from a can.
Dinner
(Snack meal) Refried beans with Rotel and tortilla chips
Spaghetti with garlic bread, green beans
Tostadas
Soft tacos
Chicken Wrap***
Nachos
Hamburgers
***I use a soft taco shell with chicken, ranch dressing, lettuce, tomatoes, purple onions and bell peppers.
–I use lettuce and tomatoes in four of the dinners. This will give them some raw vegetables.
–For snacks we usually eat fruit, applesauce and canned pineapple.
These are simple meals but we add to them and snack on junk foods at other times.
I just wrote all of this down because it’s a little snapshot into our day-to-day life as a family. I want my children to have all my writings so they can read through them in the years to come and they will spark a memory.
